easy chicken broccoli skillet

I found this recipe on another site and edited it to my family's tastes. You can have dinner on the table in under 45 minutes, great for weeknights when everybody has something going on. You have to have a great big skillet for this one! It makes a ton!

Ingredients

  • 6 - chicken thighs, cooked
  • 16 ounces broccoli, chopped, thawed
  • 1 - 10 oz cans cream of mushroom (with garlic) soup
  • 2 1/2 cups chicken broth
  • 1 1/2 cups rice, instant
  • 1 cup colby jack cheese

How To Make easy chicken broccoli skillet

  • Step 1
    Remove all skin and bones from the chicken and shred the meat. Add to skillet and warm through on medium-low to medium heat for 3-5 minutes.
  • Step 2
    Add the broccoli and continue warming for 2-3 minutes
  • Step 3
    Add soup and broth, stirring to combine. Bring contents of skillet to a boil and turn heat to low.
  • Step 4
    Stir in rice, cover and let simmer for 5-6 minutes or until rice is cooked through.
  • Step 5
    Add cheese, stir and serve!
