easy cashew chicken
This dish is absolutely fabulous. I have never been able to find a chili garlic sauce so I make my own. I mix in one minced garlic clove with 2 tsp. sweet chili sauce.

Ingredients
- 1 1/2 pounds chicken breast
- 1 clove garlic, minced
- 6 - green onions
- 1 small onion
- 1/2 teaspoon chili garlic sauce
- 3 tablespoons hoisin sauce
- 1 cup white rice, cooked
- 1 tablespoon cornstarch
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons rice vinegar
- 1 1/2 tablespoons vegetable oil
- 3/4 cup cashews
- 3 tablespoons chicken broth
How To Make easy cashew chicken

Step 1Whisk together hoisin sauce, chili garlic sauce, and chicken broth in a small bowl. Set aside

Step 2Transfer chicken to a medium bowl and season with salt and pepper

Step 3Sprinkle cornstarch on top of chicken and toss to coat

Step 4IN a large nonstick pan heat the oil over medium high heat. Saute the chicken, stirring often, until golden brown and cooked through, 8-10 minutes

Step 5Add the onion and cook for another 3-5 minutes, stirring often, until the onion is soft and translucent

Step 6Add garlic and cook for another minute

Step 7Add vinegar and stir. Cook for another minute

Step 8Reduce heat to medium-low and add the hoisin mixture. Stir to combine and cook for another few minutes to warm through. Remove from heat

Step 9Stir in cashews and green onions. Season with more salt and pepper if needed

Step 10Serve over cooked white rice
