easy cashew chicken

This dish is absolutely fabulous. I have never been able to find a chili garlic sauce so I make my own. I mix in one minced garlic clove with 2 tsp. sweet chili sauce.

Ingredients For easy cashew chicken

  • 1 1/2 lb
    chicken breast
  • 1 clove
    garlic, minced
  • 6
    green onions
  • 1 sm

  • 1/2 tsp
    chili garlic sauce
  • 3 Tbsp
    hoisin sauce
  • 1 c
    white rice, cooked
  • 1 Tbsp
    cornstarch
  • 1 tsp
    salt
  • 1/4 tsp
    pepper
  • 2 Tbsp
    rice vinegar
  • 1 1/2 Tbsp
    vegetable oil
  • 3/4 c
    cashews
  • 3 Tbsp
    chicken broth

How To Make easy cashew chicken

    Whisk together hoisin sauce, chili garlic sauce, and chicken broth in a small bowl. Set aside
  • 2
    Transfer chicken to a medium bowl and season with salt and pepper
  • 3
    Sprinkle cornstarch on top of chicken and toss to coat
  • 4
    IN a large nonstick pan heat the oil over medium high heat. Saute the chicken, stirring often, until golden brown and cooked through, 8-10 minutes

    Add the onion and cook for another 3-5 minutes, stirring often, until the onion is soft and translucent

    Add garlic and cook for another minute

    Add vinegar and stir. Cook for another minute

    Reduce heat to medium-low and add the hoisin mixture. Stir to combine and cook for another few minutes to warm through. Remove from heat

    Stir in cashews and green onions. Season with more salt and pepper if needed
  • 10
    Serve over cooked white rice
