Ingredients
- 6 chicken thighs, ( bone in and skin on)
- 3 tablespoons extra virgin olive oil
- 5 cloves garlic, crushed
- 1 large onion, sliced thinly
- 1 1/2 red bell peppers, sliced in thin strips
- 3 tablespoons cajun seasoning
- 1 1/2 cups long grain white rice
- 1 2/3 cups pitted manzanilla olives, cut in half
- 3 tablespoons fresh italian parsley, chopped finely finely
- 1 1/2 teaspoons better than bouillon chicken
How To Make easy cajun chicken and rice

Step 1Rub chicken thighs with 2 T of cajun seasoning.

Step 2Heat a large skillet with 1/2 the oil over medium high heat. Cook the chicken on both sides until golden brown, about 6-7 minutes.

Step 3Add the rest of oil and cook onion over medium high heat until softened, about 5 minutes. Add garlic, rice and the rest of the cajun seasoning and cook for 1 minute. Add bell pepper, chicken bouillon, and 3 cups of water. Bring to a boil and lower heat. Add the chicken and put a lid on the skillet. Cook for about 15 minutes until the chicken and the rice are done.

Step 4Serve chicken and rice with olives, and fresh parsley,
