Ingredients
- 4 - chicken breast halves, skinless and boneless
- 1 large can pineapple slices
- 1 cup sugar
- 2 tablespoons corn starch
- 3/4 cup white vinegar
- 1 tablespoon soy sauce
- 1/4 teaspoon ground ginger
- 1 - chicken bouillon cube
- 1 - green bell pepper, cut into strips

Step 1Preheat oven to 350.

Step 2Coat the chicken in a flour, salt and pepper mixture. brown well on all sides in vegetable oil. drain on paper towels.

Step 3Drain the pineapple, saving the juice. pour the juice into a measuring cup and add water to make 1-1/2 cups of liquid.

Step 4Combine the juice, sugar, ginger, vinegar and bouillon in a saucepan. bring to a boil, stirring constantly. boil 2 minutes.

Step 5Place the chicken in a glass baking dish and pour the sauce over the chicken. bake uncovered for 1 hour.

Step 6After 1 hour, top with the pineapple and green pepper strips. bake 30 minutes more. serve with rice.
