This from scratch version is my ultimate favorite chicken divan. Creamy, delicious comfort food. Easy to make for a weeknight dinner or always a hit at potlucks. You can switch up the seasonings to suit your own taste.

Ingredients For dreamy chicken divan

  • 1 1/2 - 2 lb
    boneless, skinless chicken breast tenders
  • 1/2
    medium onion, diced
  • 2 stalk
    celery, diced
  • 1/2
    green, red or yellow sweet peppers, diced
  • 1 clove
    garlic, minced
  • 4
    crimini mushrooms, diced
  • 2 Tbsp
    olive oil
  • 1 Tbsp
    butter, unsalted
  • 2 Tbsp
  • 1 c
    dry white wine (i use chardonnay)
  • 2 c
    chicken broth
  • 1/4 c
    sour cream
  • 1/2 c
    half and half
  • 1 c
    long grain rice, uncooked
  • 2 c
    broccoli florets, cut into bite size pieces
  • 2 c
    cheddar cheese, shredded
  • 1 tsp
    seasoning salt
  • 1/2 tsp
    curry powder
  • 1 tsp
    poultry seasoning

How To Make dreamy chicken divan

    Heat oven to 375 degrees. Season chicken with 1/2 of the seasoned salt and poultry seasoning. In an oven proof skillet, brown chicken breasts in butter and olive oil. Remove from pan and set aside.

    Add diced onion, celery and peppers to the same skillet (do not drain). Saute 2-3 minutes till tender. Add garlic and mushrooms. Saute 2 mins. more.

    Sprinkle flour over the veggies in the skillet and saute 2-3 mins. Add wine to deglaze pan. Add chicken broth and simmer on med low heat till mixture starts to thicken and gets bubbly. Stir in 1/2 & 1/2 and sour cream. Simmer a few mins then add curry powder, remaining poultry seasoning and remaining seasoned salt to taste. Stir in rice and broccoli and half of the cheese. Remove from heat.

    Place chicken back into skillet and turn to coat with sauce. Bake for 25-30 minutes. Top with remaining cheese right out of the oven.
