Ingredients
- FOR MARINADE/SAUCE:
- 6 tablespoons dijon mustard
- 2 - lemons (zest and juice)
- 2 teaspoons paprika
- 2 cloves garlic, finely chopped
- FOR CHICKEN:
- 6 - chicken breasts
- 8-10 large mushrooms, sliced
- 2 tablespoons butter
- - oil for baking pan
How To Make dijon mushroom chicken

Step 1Zest and juice lemons.

Step 2Mix the mustard, lemon zest and juice, paprika and garlic in a small bowl.

Step 3Spread generously over the chicken breasts. Cover and let stand at room temp for one hour.

Step 4While chicken is marinating, slice mushrooms and saute lightly in butter in a small frying pan.

Step 5Heat oven to 350. Lightly oil a baking sheet, place chicken pieces on pan/sheet. Arrange mushrooms around chicken on baking pan, making sure to cover shrooms with lemon/mustard sauce.

Step 6Bake until done (about 45 minutes) - use meat thermometer.

Step 7Serve with rice or potatoes, topped with a little of the mushrooms and sauce.
