In the land of mustard’s, the Dijon is king. It has a very versatile flavor that can be pared with just about anything. This recipe is a simple honey-Dijon chicken wrapped in black pepper bacon, and baked. You could top it with more honey - Dijon or sauteed mushrooms are also tasty. Enjoy.

Ingredients

  • DIJON BACON WRAPPED CHICKEN
  • 2 - chicken breast
  • 4 - black pepper bacon slices
  • 2 tablespoons olive oil
  • 3 tablespoons honey
  • 2 tablespoons dijon mustard
  • 1 tablespoon mayo
  • 1 teaspoon onion powder, or flakes

How To Make dijon bacon wrapped chicken

  • Step 1
    Combine honey, Dijon, mayo, and onion powder in a bowl. Take 1/2 of the sauce and refrigerate it.
  • Step 2
    Coat the chicken in the other 1/2 of the sauce. Refrigerate for 1-2 hours.
  • Step 3
    Heat oven to 375 F.
  • Step 4
    Take chicken out of the fridge and wrap with bacon. I lay the bacon out first in a X pattern then place the chicken in the middle UPSIDE DOWN. Wrap the bacon around the chicken and flip over. Secure bacon is necessary.
  • Step 5
    Bake for 30 – 35 min or until 160 F internally. Enjoy.
