dijon bacon chicken sammie(kat & aurora's)
I made Aurora's Dijon Bacon Wrapped Chicken a couple of weeks ago, and it is wonderful, put I had a few pieces left over, so I wrapped them and froze them, I saw on tv last week a sandwich made with puff pastry so I thought I would make one with the left over chicken and oh wow we loved it. ( I asked Aurora if it was ok to link her recipe with this and she gave me the go ahead :) Aurora we are going to share this yummy recipe

Ingredients
- 2-3 - dijon bacon wrapped chicken (recipe below)
- 1 - puff pastry sheet, thawed
- 1 cup baby spinach
- 1 - avocodo
- 3 tablespoons mayonnaise
- 1 tablespoon cayenne pepper

Step 1https://www.justapinch.com/recipes/main-course/chicken/dijon-bacon-wrapped-chicken.html Preheat oven to 350. Cut puff pastry in half, long, then cut each half into 3 pieces. Place on a cookie sheet lined with parchment paper. Cut a few slits in each piece of pastry, place another sheet of parchment on top then place a cookie sheet on top of pastry. ( If your cookie sheets are light you may want to place a heavy oven safe skillet or pot on top for weight, you do not want the pastries to puff up)Bake for 20-25 minutes or until golden brown.

Step 2While pastries are cooking, slice your chicken, mix mayo and cayenne pepper together in a small bowl, slice avocado.

Step 3When pastries are done let cool for a few minutes before making your sammie. This is the way I built mine, Puff pastry, mayo, chicken slices, spinach,pastry, avocado, chicken, pastry with mayo. Use as much as you like. Cut in half and enjoy. I served mine with fresh pineapple spears.
