delicious homemade fried rice

I have made this for years and it is the best. I got it out of a cookbook of Chinese recipes. I've added shrimp or chicken and is really easy if you get everything ready ahead of time because it cooks quickly. The trick is make rice in the morning, then use the cold rice for making the dish.

Ingredients

  • 2 large eggs
  • 1/2 teaspoon salt
  • 5 tablespoons vegetable oil or peanut oil
  • 1 cup chopped green onions, include tops
  • 4 cups cold cooked rice
  • 2 tablespoons chicken broth
  • 3 tablespoons soy sauce
  • 1/2 teaspoon black pepper
  • 2 teaspoons sesame oil

How To Make delicious homemade fried rice

  • Step 1
    Cook rice ahead of time so it is cold for making this dish. Beat 2 eggs with 1/4 tsp salt in small bowl. Heat 2 Tbsp of oil in wok or large skillet over medium heat 1 minute. Pour in beaten eggs, stirring continuously until eggs are cooked dry and separated into small pieces. Remove and set aside.
  • Step 2
    Heat 3 Tbsp oil in wok or skillet over medium-high heat 1 minute. Add green onions, rice and meat(cooked shrimp or cooked chicken). Stir fry 5 minutes, add chicken broth, 1/4 tsp salt and soy sauce. Stir to mix well.
  • Step 3
    Stir in cooked eggs, pepper and sesame oil. The Sesame oil really gives it the restaurant taste, try not to skip it. Serve hot and enjoy
