I am sharing these recipes without trying them, but I am a good judge of recipes, so trust me. The few I am going to share are coming from a FB site called, Incredible Recipes. I was blown away. Everything so different for once. I like new and exciting things to try.

chicken breasts
2 medium
bell peppers
2 large
garlic cloves, minced
14 oz
can diced tomatoes
vegetable bouillon cube
grated cheese
1 Tbsp
italian herbs
1/2 c
1/2 c
2 Tbsp
olive oil, extra virgin
1/2 c
mozzarella cheese
1 Tbsp
pinch of nutmeg
salt & pepper


1Season the chicken with oil, salt & pepper and cook lightly browned in a pan over medium heat till browned.. place chicken in a baking dish and set aside.
2Slice onions into half rings and add to pan. Once the onions are softened, transfer them to the oven dish with the chicken. Make sure there are onions underneath the chicken.
3Cut the peppers into rings and add them to the pan for a few minutes. Cook them till they are slightly pliable and add them to the oven dish as well. Once again make sure some of the peppers are underneath the chicken too.
4Add garlic to the pan, and cook for one minute before adding the diced tomatoes and vegetable boullion cube with the water, then pour over chicken and vegetables. Add the Italian seasoning, and a pinch of nutmeg. Pour in the cream, season with salt & pepper and let simmer for 5 minutes
5Cover the baking dish with foil and bake 30 minutes. After 30 minutes, remove foil, top with grated cheese & mozzarella and bake 15 more minutes
6Serve with cooked spaghetti and crusty bread.
