dale's waikiki bbq chicken
Easy Hawaiian style chicken with a sweet and sour bbq sauce, not much effort at all. Not my original recipe, but I have loved this and have been making it for over 15 years. Thanks to Dale for posting the original.

Ingredients
- 1 1/2 pounds boneless chicken breast
- - flour, to coat
- - salt and pepper
- - cooking oil
- 8 ounces can crushed pineapple, undrained
- 1 cup barbecue sauce
- 1 tablespoon cornstarch
- 1/2 teaspoon ground ginger
- 1 cup pineapple chunks (optional garnish)
How To Make dale's waikiki bbq chicken

Step 1Flatten chicken breast between pieces of wax paper or plastic wrap with a mallet and cut into serving size pieces.

Step 2Season chicken with salt and black pepper, then dredge in flour, shaking off excess.

Step 3Heat oil about an inch deep in a large skillet and brown pieces of chicken on both sides and drain.

Step 4Whisk together the crushed pineapple, bbq sauce, cornstarch and ginger.

Step 5Place chicken in a clean skillet and cover with sauce. Bring mixture to a boil, then reduce heat, cover and simmer for 25-35 minutes or until chicken is cooked through.

Step 6Garnish with chinks of pineapple if desired.
