dad's rice pilaf for two

This actually started off being a side dish that slowly morphed into a main dish as well with the addition of chicken and a veggie of your choice. Broccoli or peas can be added to make a one pot meal. This dish is simply rice and noodles cooked in a chicken broth and salt and pepper added. The secret is to brown the dry egg noodles with butter before adding the liquid.

Ingredients For dad's rice pilaf for two

  • 1 c
    wide egg noodles
  • 2 c
    chicken broth plus 1/4 c more in case needed
  • 1 c
    white rice
  • salt and pepper to taste
  • 2 Tbsp
    butter
  • 2 c
    cooked chicken breast (optional)
  • 1 c
    frozen peas (optional)

How To Make dad's rice pilaf for two

  • 1
    In a medium sauce pot, heat 1 tbsp butter and add uncooked egg noodles. Stir frequently until noodles have browned. Add broth and rice to the pot of egg noodles and stir to ensure rice will not clump at the bottom. Bring to boil and turn down to low and cover for 20 minutes, not stirring. After 20 minutes, turn off heat and fluff with fork adding remaining 1 Tbsp butter, salt and pepper and any additions until warm.
