cuz'n kelly's yummy pineapple cheese casserole

My cousin made this for Christmas with ham....I fell in love with it & have been craving it ever since. We southerners sure love our pineapple dishes. From sweet to savory & everywhere in between, we enjoy it in a multitude of dishes & this is one of the oldest. Another one of those tasty dishes that doesn't really photograph all that pretty & at first glance, certainly seems an unlikely & odd combination of ingredients to pair together. It is intended to be a side dish, & not a dessert. But I sure could eat it as a dessert!!!! Oh yum!!!!

Ingredients

  • 1 cup sugar
  • 6 tablespoons flour
  • 2 - 20 oz. cans pineapple chunks, drained but juice reserved
  • 2 cups cheddar cheese, shredded
  • 2 sleeves - ritz crackers, crushed
  • 1 stick butter, melted

How To Make cuz'n kelly's yummy pineapple cheese casserole

  • Step 1
    Preheat oven to 350 degrees F.
  • Step 2
    Grease a 9 x 13" casserole dish with butter.
  • Step 3
    In a large bowl, stir together the sugar & flour. Gradually stir in the cheese. Add the drained pineapple chunks & stir until ingredients are well combined.
  • Step 4
    Pour the mixture into the prepared casserole dish.
  • Step 5
    In another medium bowl, combine the cracker crumbs, melted butter & reserved pineapple juice, stirring with a rubber spatula until evenly blended.
  • Step 6
    Spread crumb mixture on top of pineapple mixture.
  • Step 7
    Bake for 45 minutes or until golden brown. Yum!!
  • Step 8
    NOTES: We already know it goes great with ham. But I think it would be great with fish, chicken, turkey, pork, etc.
