"currying favor" chicken salad

This is my FAVORITE summertime lunch. It's fast, yummy and very cooling on a hot summer day. GREAT for "tea" parties, ladies' luncheons or showers.

Ingredients

  • 3 - chicken breast halves, skinless and boneless
  • 4 - ribs of celery
  • 1 1/2 cups red, seedless grapes
  • 1 cup pecan pieces
  • 1 cup sour cream, lite if you want
  • 1/3 cup mayonnaise
  • 1 to 3 tablespoons curry powder
  • 1/2 teaspoon salt
  • - fresh-ground pepper
  • 1 - bag mixed field green salad
  • 4 - croissants

How To Make "currying favor" chicken salad

  • Step 1
    Boil chicken, cut into cubes.
  • Step 2
    Slice celery into 1/2-inch slices.
  • Step 3
    Wash, drain, and separate grapes. Cut grapes in half if you want, but I leave them whole.
  • Step 4
    In small bowl, combine sour cream, mayonnaise, curry, salt, pepper.
  • Step 5
    Put cooked chicken in large bowl. Add celery, pecans and sour cream mixture. Toss gently to coat. Add grapes last and stir gently again.
  • Step 6
    Serve over bed of mixed field greens with a croissant on the side.
