Ingredients
- 2 tablespoons vegetable oil
- 1 large onion, sliced
- 2 tablespoons curry powder
- 8 - chicken thighs, skinless and boneless
- 1 can 398ml coconut milk
- 2 large carrots sliced into coins
- 2 large sweet potatoes, cut into chunks
- 1 medium sweet green pepper cut into slices
- 1 cup frozen peas
- 1/2 cup chopped cilantro
- 3 cups cooked rice cooked according to package directions
How To Make curry chicken on rice

Step 1Heata large wide frying pan over medium-high heat add oil then onion and curry powder, cook until onion starts to soften, sprinkle chicken with salt and pepper and add to pan and saute til chicken takes on a golden color.

Step 2Add coconut milk, carrots, potatoes and pepper, and bring to a boil, lower heat, cover and cook until vegetables are tender about 15 to 20 minutes.

Step 3Remove lid and continue cooking until liquid is slightly thickened about 5 minutes,stir in peas and cilantro...serve over cooked rice.
