curry chicken and broccoli casserole

I have been making this casserole for over 25 years with a few tweaks along the way but have no idea where or who I got it from but it is delicious and better yet, simple to make. My 3 longtime girlfriends (we're celebrating 30 yrs of friendship this Aug,2012)fondly refer to it as "THE Chicken Dish". Many laughs around the dining room table as we enjoyed this casserole. I serve it over long grain white rice but you can use pasta or serve without either. My photos are from when I prepared a 1/2 recipe...yum

Ingredients

  • 8 medium chicken breast , skinless and boneless
  • 1 bunch broccoli, fresh
  • SAUCE
  • 4 cans cream of chicken soup
  • 1/2 cup mayonnaise
  • 3 tablespoons lemon juice
  • 1 1/2 tablespoons curry powder
  • OPTIONAL
  • 1/2 cup bread crumbs, dry

How To Make curry chicken and broccoli casserole

  • Step 1
    Boil the chicken breast for about 20 minutes. Let cool to the touch and then cut in approx. 1" cubes. At this time preheat your oven to 350°
  • Step 2
    Place broccoli in Microwave safe dish and cover. Microwave 10 minutes. Chop into bite size pieces.
  • Step 3
    As the broccoli is cooking, whisk the sauce ingredients together in a med bowl and set aside
  • Step 4
    Place the cut chicken breast pieces in a oven safe dish.
  • Step 5
    Layer chopped broccoli on top of the cut chicken
  • Step 6
    Pour sauce over the chicken and broccoli. Add the optional bread crumbs if desired at this time.
  • Step 7
    Bake in preheated 350° oven for 1 hour. Serve over rice is desired
