curry chicken and broccoli casserole
I have been making this casserole for over 25 years with a few tweaks along the way but have no idea where or who I got it from but it is delicious and better yet, simple to make. My 3 longtime girlfriends (we're celebrating 30 yrs of friendship this Aug,2012)fondly refer to it as "THE Chicken Dish". Many laughs around the dining room table as we enjoyed this casserole. I serve it over long grain white rice but you can use pasta or serve without either. My photos are from when I prepared a 1/2 recipe...yum

Ingredients
- 8 medium chicken breast , skinless and boneless
- 1 bunch broccoli, fresh
- SAUCE
- 4 cans cream of chicken soup
- 1/2 cup mayonnaise
- 3 tablespoons lemon juice
- 1 1/2 tablespoons curry powder
- OPTIONAL
- 1/2 cup bread crumbs, dry
How To Make curry chicken and broccoli casserole

Step 1Boil the chicken breast for about 20 minutes. Let cool to the touch and then cut in approx. 1" cubes. At this time preheat your oven to 350°

Step 2Place broccoli in Microwave safe dish and cover. Microwave 10 minutes. Chop into bite size pieces.

Step 3As the broccoli is cooking, whisk the sauce ingredients together in a med bowl and set aside

Step 4Place the cut chicken breast pieces in a oven safe dish.

Step 5Layer chopped broccoli on top of the cut chicken

Step 6Pour sauce over the chicken and broccoli. Add the optional bread crumbs if desired at this time.

Step 7Bake in preheated 350° oven for 1 hour. Serve over rice is desired
