I love to eat Thai, Middle Eastern and Indian food. So, I decided to make my own version of Chicken Curry. It came out really good and tasty! Try it for yourself and let me know what you think. I may add some coconut milk next time, for a creamy taste.

Ingredients

  • 1 package chicken breast - 3-4 pieces, cut up into smal pieces
  • 1 tablespoon lemon
  • 1/2 teaspoon curry powder - i use mild - you can add more to taste
  • - salt and pepper, to taste
  • 1 teaspoon dried basil
  • 3 tablespoons olive oil
  • VEGETABLES
  • 1 - red bell pepper, cut into strips and cut in half
  • 1 - orange bell pepper, cut into strips and cut in half
  • 1 - yellow bell pepper, cut into strips and cut in half
  • 1 - onion, large, cut up

How To Make curry chicken

  • Step 1
    Place cut up chicken into a medium sized bowl and add lemon, curry powder, salt & pepper and dried basil. Mix well.
  • Step 2
    Pour olive oil into a pan. Pour chicken mixture into pan and cook over medium heat until chicken is no longer pink inside (about 10 minutes).
  • Step 3
    In the meantime, prepare the bell peppers and onions. Cook with a little olive oil in a large pan until soft.
  • Step 4
    After the chicken and vegetables are done cooking, you can mix them together or put them in separate serving dishes.
  • Step 5
    Serve over brown or white rice. Tzatziki dip/sauce with pita bread is also an excellent side to this dish.
