- DRESSING
- 1/4 cup each sweet mango chutney and plain greek yogurt
- 2 teaspoons curry powder
- 1 teaspoon olive oil
- 2 teaspoons lime juice
- salt & pepper
- FOR THE CHICKEN
- 1 cup rotisserie chicken cut into small chunks
- 1 gala apple peeled cored and chopped into small pieces
- 2 ounces goat cheese crumbled
- 1/4 cup green onions chopped
- 2 tablespoons crushed pecans
- 2 tablespoons fresh cilantro chopped
- butter lettuce leaves for serving

Step 1Mix the ingredients for the dressing together and set aside.

Step 2Mix the chicken and apple together with the remaining ingredients except the lettuce leaves.
