This is a great dish to cook for a family occasion. Just enough spice and heat. My family loves this dish. I took it to a friend's home for a pot luck and it was gone in a few minutes. I guess that next time I'll make a double batch!

Ingredients

  • 1 cup orange juice
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 can chopped green chilies( 4ozs.)
  • 1 tablespoon minced garlic
  • 1 tablespoon oregno
  • 1 tablespoon ground cumin
  • 1/4 teaspoon ground red pepper
  • 4 - bone in skin on chicken breast halves
  • - salt and pepper to taste

How To Make cuban citrus chicken

  • Step 1
    Combine orange juice, lemon juice, olive oil, green chilies, garlic, oregano, cumin, red pepper and salt to taste in a resealable plastic bag.
  • Step 2
    Add chicken; seal bag. Refrigerate for 2-8 hours, turning occasionally.
  • Step 3
    Coat grill rack with nonstick cooking spray. Preheat grill to medium direct heat (300-350 degrees)
  • Step 4
    Remove chicken from marinade. Place chicken bone side up on grill rack. Grill for 25 - 35 minutes or until chicken is no longer pink turning once.
