crunchy cheesy chicken

I had run out of my normal coating (Shake N Bake) to use in a quick pinch so I decided to use what I had on hand. This is a fun, quick and easy dish to make, and fun for the kids to help out. I made this with my niece (5) and her sister (2), they both loved it!

Ingredients For crunchy cheesy chicken

    boneless split chicken breasts, trimmed and rinsed
  • 1/2 c
    cheddar cheese baked snack crackers, crushed (i prefer cheese nips)
  • 1/4 c
    seasoned bread crumbs
  • 2 Tbsp
    flour
  • 1/8 tsp
    black pepper
  • 2 dash
    sea salt (optional)
  • 1/8 tsp
    cayenne pepper
  • 4 Tbsp
    shredded parmesan cheese (fresh)
  • 1/8 tsp
    garlic powder
  • 1/8 tsp
    onion powder
  • 1
    egg beaten
  • flour to coat

How To Make crunchy cheesy chicken

    Preheat Oven to 425.

    In a gallon size storage bag combine all ingredients except last 2 (I put the crackers in whole). Seal bag and crush crackers while mixing all the ingredients together by shaking. Leave some of the crackers in bigger crumbs so you have a crispier chicken

    In small bowl beat the egg. On medium plate put enough flour to coat all 4 breasts. Coat breasts, dip in egg and drop 2 at a time in the bag with the coating. Shake until well coated.

    Spray a 9x9 baking dish with cooking spray, place chicken in baking dish and bake at 425 for 45 mins.
