This is an easy, savory and flavorful chicken that you can cook in the crockpot. Consider adding red potatoes around the chicken while cooking. Delicious! Make homemade gravy out of the drippings!

Ingredients

  • 4-5 pounds whole chicken (giblets removed)
  • 1 small onion (quartered)
  • 2 tablespoons olive oil (extra virgin)
  • 1 1/2 teaspoons rosemary
  • 1 1/2 teaspoons thyme (ground)
  • 1/2 teaspoon onion powder
  • - salt and pepper

How To Make crockpot rosemary thyme chicken

  • Step 1
    Wash chicken and stuff onion in cavity. Give chicken a massage with olive oil.
  • Step 2
    Combine rosemary and thyme and rub underneath breast skin. Sprinkle onion powder over chicken along with a little extra rosemary and thyme. Salt and freshly cracked pepper to taste.
  • Step 3
    Cook in crockpot on low until chicken reaches internal temperature of 180 degrees, or until done. Crockpots vary somewhat, I would guess at least 6 hours. Check for doneness.
