This is so easy,economical and a great dish to start it and forget it until mealtime.

Ingredients

  • 4 cups baby carrots
  • 4 - yukon gold potatoes cut into 11/2 " pieces
  • 1 large onion/chopped
  • 2 medium stalks of celery,sliced (1 cup)
  • 1 teaspoon dryed thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh pepper
  • 2 pounds boneless,skinless chicken thighs
  • 2 cups chicken stock
  • 2 cups fresh snap peas
  • 1 cup heavy cream
  • 1/2 cup flour
  • 1 teaspoon dried thyme leaves
  • - cooking spray

How To Make crockpot creamy herbed chicken stew

  • Step 1
    Spray 5-6 quart crockpot
  • Step 2
    place the carrots,potatoes,onion,and celery in crockpot
  • Step 3
    sprinkle with 1 tsp. thyme,salt and pepper
  • Step 4
    top with chicken
  • Step 5
    pour the chicken stock over
  • Step 6
    cover,cook on LOW about 7-8 hours,adding the pea pods last 5-10 minutes of cooking time.
  • Step 7
    Remove the chicken and veggies from crockpot to a serving bowl,using a slotted spoon;cover to keep warm.
  • Step 8
    increase heat setting to HIGH,mix together in a small bowl mix cream,flour,and 1 tsp. of the thyme,stir into the liquid in crockpot.
  • Step 9
    COVER,cook about 10 minutes until thickened.Pour sauce over the chicken and vegetables.
