Ingredients
- 4 cups baby carrots
- 4 - yukon gold potatoes cut into 11/2 " pieces
- 1 large onion/chopped
- 2 medium stalks of celery,sliced (1 cup)
- 1 teaspoon dryed thyme
- 1/2 teaspoon kosher salt
- 1/2 teaspoon fresh pepper
- 2 pounds boneless,skinless chicken thighs
- 2 cups chicken stock
- 2 cups fresh snap peas
- 1 cup heavy cream
- 1/2 cup flour
- 1 teaspoon dried thyme leaves

Step 1Spray 5-6 quart crockpot

Step 2place the carrots,potatoes,onion,and celery in crockpot

Step 3sprinkle with 1 tsp. thyme,salt and pepper

Step 4top with chicken

Step 5pour the chicken stock over

Step 6cover,cook on LOW about 7-8 hours,adding the pea pods last 5-10 minutes of cooking time.

Step 7Remove the chicken and veggies from crockpot to a serving bowl,using a slotted spoon;cover to keep warm.

Step 8increase heat setting to HIGH,mix together in a small bowl mix cream,flour,and 1 tsp. of the thyme,stir into the liquid in crockpot.

Step 9COVER,cook about 10 minutes until thickened.Pour sauce over the chicken and vegetables.
