Ingredients

  • 4 c
    baby carrots
  • 4
    yukon gold potatoes cut into 11/2 " pieces
  • 1 large
    onion/chopped
  • 2 medium
    stalks of celery,sliced (1 cup)
  • 1 tsp
    dryed thyme
  • 1/2 tsp
    kosher salt
  • 1/2 tsp
    fresh pepper
  • 2 lb
    boneless,skinless chicken thighs
  • 2 c
    chicken stock
  • 2 c
    fresh snap peas
  • 1 c
    heavy cream
  • 1/2 c
    flour
  • 1 tsp
    dried thyme leaves
  • ·
    cooking spray

How to Make Crockpot Creamy Herbed Chicken stew

Step-by-Step

  1. Spray 5-6 quart crockpot
  2. place the carrots,potatoes,onion,and celery in crockpot
  3. sprinkle with 1 tsp. thyme,salt and pepper
  4. top with chicken
  5. pour the chicken stock over
  6. cover,cook on LOW about 7-8 hours,adding the pea pods last 5-10 minutes of cooking time.
  7. Remove the chicken and veggies from crockpot to a serving bowl,using a slotted spoon;cover to keep warm.
  8. increase heat setting to HIGH,mix together in a small bowl mix cream,flour,and 1 tsp. of the thyme,stir into the liquid in crockpot.
  9. COVER,cook about 10 minutes until thickened.Pour sauce over the chicken and vegetables.
