crockpot chicken dinner

This is my dinner for tonight. Just thought I would share this simple method...you can tweak it to fit your family.

Ingredients

  • 3-4 - chicken breast halves, skinless and boneless...or any chicken pieces you like
  • 2 - large baking potatoes or a dozen red potatoes
  • 1 - small to medium onion
  • 3 tablespoons ranch dressing seasoning
  • 3-4 - generous pats of butter
  • 1/4 cup chicken broth if needed

How To Make crockpot chicken dinner

  • Step 1
    Wash potatoes well. I leave the skin on. Slice onion and potatoes and layer in the bottom of crock pot. I usually put onion first and then the potatoes. Sprinkle half of the ranch dressing mix over this layer.
  • Step 2
    On top of the potato layer, place your chicken pieces. Adjust amount depending on how many you are expecting for dinner. Sprinkle them with the rest of the dressing mix. Add a generous pat of butter to the top of each breast piece.
  • Step 3
    Set crockpot on high for 4-5 hours. Check periodically to see if it needs the addition of a bit of moisture. If needed, add the chicken broth or stock.
