crockpot chicken dinner
This is my dinner for tonight. Just thought I would share this simple method...you can tweak it to fit your family.

Slow Cooker Crock Pot

Ingredients
- 3-4 - chicken breast halves, skinless and boneless...or any chicken pieces you like
- 2 - large baking potatoes or a dozen red potatoes
- 1 - small to medium onion
- 3 tablespoons ranch dressing seasoning
- 3-4 - generous pats of butter
- 1/4 cup chicken broth if needed
How To Make crockpot chicken dinner

Step 1Wash potatoes well. I leave the skin on. Slice onion and potatoes and layer in the bottom of crock pot. I usually put onion first and then the potatoes. Sprinkle half of the ranch dressing mix over this layer.

Step 2On top of the potato layer, place your chicken pieces. Adjust amount depending on how many you are expecting for dinner. Sprinkle them with the rest of the dressing mix. Add a generous pat of butter to the top of each breast piece.

Step 3Set crockpot on high for 4-5 hours. Check periodically to see if it needs the addition of a bit of moisture. If needed, add the chicken broth or stock.
