I'm looking for something different to use chicken leg quarters and this seems to fit the bill.

I plan on testing it next week and will update the recipe and add pics then. I will have to double the recipe for my family.

Ingredients

  • 4 lb
    chicken dark meat--cut into bite size pieces
  • 1/2 c
    flour
  • 1 tsp
    black pepper
  • 2 Tbsp
    oil
  • 1/2 c
    soy sauce
  • 4 Tbsp
    rice wine vinegar
  • 4 Tbsp
    katsup
  • 2 Tbsp
    brown sugar
  • 2 clove
    garlic--minced
  • 1 tsp
    fresh minced ginger
  • 1/2 tsp
    red pepper flakes
  • 1 c
    cashews

How to Make CROCKPOT CASHEW CHICKEN

Step-by-Step

  1. Combine flour and pepper in resealable food storage bag.
    Add chicken. Shake to coat with flour mixture.

    Heat oil in skillet over medium-high heat.
    Brown chicken about 2 minutes on each side.

    Place chicken in slow cooker.
  2. Combine soy sauce, vinegar, ketchup, sugar, garlic, ginger, and pepper flakes in small bowl; pour over chicken.
  3. Cook on LOW for 3 to 4 hours. Add cashews and stir. Server over rice.
