This recipe got encridible reviews from the blogsite: www.365daysofcrockpot.com I'm looking for something different to use chicken leg quarters and this seems to fit the bill. I plan on testing it next week and will update the recipe and add pics then. I will have to double the recipe for my family.

Ingredients

  • 4 pounds chicken dark meat--cut into bite size pieces
  • 1/2 cup flour
  • 1 teaspoon black pepper
  • 2 tablespoons oil
  • 1/2 cup soy sauce
  • 4 tablespoons rice wine vinegar
  • 4 tablespoons katsup
  • 2 tablespoons brown sugar
  • 2 cloves garlic--minced
  • 1 teaspoon fresh minced ginger
  • 1/2 teaspoon red pepper flakes
  • 1 cup cashews

How To Make crockpot cashew chicken

  • Step 1
    Combine flour and pepper in resealable food storage bag. Add chicken. Shake to coat with flour mixture. Heat oil in skillet over medium-high heat. Brown chicken about 2 minutes on each side. Place chicken in slow cooker.
  • Step 2
    Combine soy sauce, vinegar, ketchup, sugar, garlic, ginger, and pepper flakes in small bowl; pour over chicken.
  • Step 3
    Cook on LOW for 3 to 4 hours. Add cashews and stir. Server over rice.
