crockin' good cheesy chicken spaghetti

I combined one of my favorite recipes with one I found in my newest cookbook to come up with this crockin' good dish! It's quick, it's easy, it's tasty and it's done in the crock pot. How easy is that? Hope you enjoy as much as we did! Inspired by 2 recipes; one from the Crockin Girls (out of my new cookbook) and one from Paula Deen that I've been making for some time now. Ingredients

  • 4 cups cooked chicken: rotisserie chicken, deboned, boiled chicken breast or canned chicken
  • 1 pound velvetta cheese, cubed
  • 1 can (10.5-oz) cream of mushroom soup, fat free for lighter version
  • 1 can (10.5-oz) cream of chicken soup, fat free for light version
  • 1 can rotel tomatoes, original
  • 1 can (6.5-oz) mushrooms, sliced
  • 1 jar (4-oz) pimento, drained
  • 1/4 cup dry white wine
  • 1/2 cup chicken broth or water
  • 1 small onion, chopped
  • 1 - 12-oz package spaghetti cooked to directions minus 1 minute; al dente

How To Make crockin' good cheesy chicken spaghetti

  • Step 1
    Combine all ingredients except pasta in crockpot; stir well. Cook on low 3 hours.
  • Step 2
    Cook pasta according to direction less a minute to al dente; drain. NOTE: you want the pasta a little firm. Add to crockpot the last 30 minutes of cooking.
  • Step 3
    Serve with a nice buttered roll and a tossed salad. Enjoy!
