This recipe is very versatile. You could add any toppings that you enjoy while eating mexican. It is really good and my family loves it.

Ingredients

  • 4-6 - boneless, skinless chicken breast
  • 1 1/2 cups medium salsa
  • 1 can campbell's cream of chicken soup
  • 1 package taco seasoning mix
  • 8 ounces mexican blend shredded cheese
  • 1 can black beans, drained
  • - optional - sliced onions and bell peppers
  • 8 ounces sour cream

How To Make crock pot salsa chicken

  • Step 1
    Layer chicken in crock pot.
  • Step 2
    Chop veggies and place over chicken. Add black beans.
  • Step 3
    In mixing bowl, combine soup, salsa, and taco seasoning. Pour over chicken and veggies.
  • Step 4
    Cook on High for 6 hours. With 30 minutes remaining, shred chicken with a fork in crock pot and stir in sour cream. Cover mixture with cheese and cook remainder of time.
  • Step 5
    Serve over rice, as fajitas, or on nachos.
