This is my favorite easy crock pot meal. You toss the ingredients in the crock pot, let it cook, and you're ready for dinner at the end of the day.

Ingredients
- 3 - boneless, skinless, chicken breasts
- 1 jar your favorite salsa
- 1 can drained corn
- 1 can drained black beans
- 1 package cheddar cheese, shredded
- 1 pinch salt & pepper
How To Make crock pot mexican chicken

Step 1Spray the crock pot with cooking spray or lightly coat with cooking oil. Place chicken in the crock pot and season as you like it (if you like it mild just add salt & pepper, but if you like it spicy add as much as you like of cayenne, paprika, cumin, coriander, & chili powder). Just add as much spice as you like!

Step 2Pour the salsa, drained corn, & drained black beans over the seasoned chicken.

Step 3Cook on high for approximately 5 hours or on low for approximately 7 - 8 hours.

Step 4A few minutes before serving, pour shredded cheese over the top of the dish and cover so the cheese melts.

Step 5Serve with rice or corn chips and enjoy!
