Ingredients
- 1 large onion, diced
- 5 cloves garlic, minced
- 1 tablespoon garlic powder with parsley
- 1 tablespoon canola or vegetable oil
- 1 - 6 oz. cans tomato paste
- 1 teaspoon thyme, dried
- 2 pounds chicken tenders, skinless & boneless, cut into bite size pieces
- - salt & pepper, to taste
- 3 tablespoons white wine vinegar
- 4 - 14 oz. cans artichoke hearts, chopped, undrained
- 2 cans cream of chicken soup
- 1/2 cup parmesan cheese, grated
- 4 tablespoons lemon juice
- 4 tablespoons dijon mustard
- 1 pint button mushrooms, sliced
- - cornstarch
- - rice or noodles
How To Make crock pot lemon artichoke chicken

Step 1Combine onion, garlic, garlic powder, oil, paste & thyme in a microwave safe bowl. Microwave for 4 - 5 minutes, stirring occasionally until onions are soft.

Step 2Place chicken in the crock pot. Season with salt & pepper.

Step 3Add in the onion mixture & white wine vinegar.

Step 4Cover & cook on LOW for about 4 hours.

Step 5Stir in the artichokes, cream of chicken soup, parmesan, lemon juice, Dijon mustard & mushrooms. Cover & cook on LOW for another 30 - 60 minutes. If needed, you may thicken it with cornstarch.

Step 6Serve over rice or noodles.
