crock pot lemon artichoke chicken

YUM! Lemon & artichokes....mmmmmmm! Two of my favorites!

Ingredients

  • 1 large onion, diced
  • 5 cloves garlic, minced
  • 1 tablespoon garlic powder with parsley
  • 1 tablespoon canola or vegetable oil
  • 1 - 6 oz. cans tomato paste
  • 1 teaspoon thyme, dried
  • 2 pounds chicken tenders, skinless & boneless, cut into bite size pieces
  • - salt & pepper, to taste
  • 3 tablespoons white wine vinegar
  • 4 - 14 oz. cans artichoke hearts, chopped, undrained
  • 2 cans cream of chicken soup
  • 1/2 cup parmesan cheese, grated
  • 4 tablespoons lemon juice
  • 4 tablespoons dijon mustard
  • 1 pint button mushrooms, sliced
  • - cornstarch
  • - rice or noodles

How To Make crock pot lemon artichoke chicken

  • Step 1
    Combine onion, garlic, garlic powder, oil, paste & thyme in a microwave safe bowl. Microwave for 4 - 5 minutes, stirring occasionally until onions are soft.
  • Step 2
    Place chicken in the crock pot. Season with salt & pepper.
  • Step 3
    Add in the onion mixture & white wine vinegar.
  • Step 4
    Cover & cook on LOW for about 4 hours.
  • Step 5
    Stir in the artichokes, cream of chicken soup, parmesan, lemon juice, Dijon mustard & mushrooms. Cover & cook on LOW for another 30 - 60 minutes. If needed, you may thicken it with cornstarch.
  • Step 6
    Serve over rice or noodles.
