Seared chicken breast with vegetables piled on top, make the stew a special tasty dinner. Set it and forget it meals are the best. It’s been cold and rainy lately here in Alabama. Adding the herbs in along with the tomato paste, makes this dish really good in the end.

Ingredients
- 2 pounds chicken breast, seared
- 1 large yellow onion
- 3 large carrots, chopped
- 3 large celer ribs, chopped
- 4 large potatoes, cubed
- 2 tablespoons tomato paste
- 2 tablespoons garlic
- 2 teaspoons rosemary, dried
- 2 tablespoons thyme
- 32 ounces chicken broth or chicken stock
- 2 tablespoons corn starch
- 1/3 cup water
How To Make crock pot chicken stew

Step 1In a large skillet, add oil and sear the chicken breast until browned. Salt each side. Do not cook thoroughly through.

Step 2Transfer into your Crock Pot or slow cooker. Add carrots, celery, onion, garlic, tomato paste, and herbs.

Step 3Slowly add in the chicken stock or chicken broth. Secure the lid and cook for five hours, stirring halfway through.

Step 4At the end of the process, poke potatoes and or carrots to see if they are soft enough.

Step 5In a separate bowl mix corn starch and water to make a slurry. Add this to the pot and stir to combine. This should thicken the juices from the chicken and vegetables. Add pepper if needed also.

Step 6Serve and enjoy. Serve with biscuits or crusty bread if you want also.
