Cannot for the life of me remember were I got this recipe! However, it's quick, it's easy and delicious! Great for lunch or dinner. Enjoy!!

  • 2-3 - chicken breasts
  • 1 tablespoon olive oil
  • 1 can rotelle (choose your heat)
  • 1 can cream of chicken soup
  • 1 can nacho cheese soup
  • 1 can corn
  • TOPPINGS
  • - mexican crispy tortilla strips
  • - sour cream
  • - mexican blend shredded cheese

How To Make crock pot chicken enchilada soup

  • Step 1
    Cook chicken in olive oil in skillet. Let stand for several minutes, then shred.
  • Step 2
    Add all ingredients including shredded chicken to crock pot, stir well.
  • Step 3
    Cook on low for 4-6 hours. Serve with above toppings per dish. ENJOY!
