Cannot for the life of me remember were I got this recipe! However, it's quick, it's easy and delicious! Great for lunch or dinner. Enjoy!!

Ingredients

  • 2-3
    chicken breasts
  • 1 Tbsp
    olive oil
  • 1 can(s)
    rotelle (choose your heat)
  • 1 can(s)
    cream of chicken soup
  • 1 can(s)
    nacho cheese soup
  • 1 can(s)
    corn
  • TOPPINGS

  • ·
    mexican crispy tortilla strips
  • ·
    sour cream
  • ·
    mexican blend shredded cheese

How to Make Crock Pot Chicken Enchilada Soup

Step-by-Step

  1. Cook chicken in olive oil in skillet. Let stand for several minutes, then shred.
  2. Add all ingredients including shredded chicken to crock pot, stir well.
  3. Cook on low for 4-6 hours. Serve with above toppings per dish. ENJOY!
