- 2-3 - chicken breasts
- 1 tablespoon olive oil
- 1 can rotelle (choose your heat)
- 1 can cream of chicken soup
- 1 can nacho cheese soup
- 1 can corn
- TOPPINGS
- - mexican crispy tortilla strips
- - sour cream
- - mexican blend shredded cheese
How To Make crock pot chicken enchilada soup

Step 1Cook chicken in olive oil in skillet. Let stand for several minutes, then shred.

Step 2Add all ingredients including shredded chicken to crock pot, stir well.

Step 3Cook on low for 4-6 hours. Serve with above toppings per dish. ENJOY!
