crock pot chicken and dumplings... or noodles

This was one of my mothers cold weather specialties! Of course I have tweaked it a bit.

Ingredients

  • 3 - carrots, sliced
  • 3 - celery stalks, sliced (optional)
  • - or
  • 2 teaspoons celery salt
  • 1 small onion, diced
  • 2 - 3 pounds whole chicken
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 2 tablespoons greek seasoning
  • 1 - batch of your favorite dumpling recipe (see my recipe if you dont have one)

  • 16 ounces egg noodles

How To Make crock pot chicken and dumplings... or noodles

  • Step 1
    In a large crock pot layer carrots, celery, and onion.
  • Step 2
    Rinse whole chicken removing giblets from cavity. And place on top of vegetables in crock pot. You can put the giblets in the bottom of the pot with the vegetables if you like.
  • Step 3
    Cover and cook on Low 8-10 hours or on High 3 1/2-5 hours.
  • Step 4
    Leaving the liquid in the pot remove the chicken and skim out the veggies (and giblets if you used them). Turning (or leaving) the crock pot on High and keep it covered tightly to keep it very hot.
  • Step 5
    Debone the chicken. Cut large pieces into bite size bits.
  • Step 6
    Add the veggies and deboned chicken back to the liquid in the pot. Cover tightly.
  • Step 7
    Meanwhile mix up your dumplings. And add them or a package of egg noodles to the pot. Cover tightly again and cook for another 12-15 minutes or until dumplings or noodles are done.
