This wonderful Spanish chicken dish that's very easy to make, and it tastes wonderful. It's great with plain white rice (though I have served it with Spanish Rice, too).

Ingredients

  • 2 pounds boneless skinless chicken (thighs or breasts), about 10 pieces
  • 1 small onion, diced
  • 1 clove garlic, crushed
  • 1 - bell pepper, chopped (green, red, yellow or orange)
  • 4 large plum tomatoes
  • 2 tablespoons alcaparrado or pitted spanish olives
  • 1/2 cup water
  • 8 ounces tomato sauce
  • 1/4 teaspoon dried oregano leaves
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1-2 - bay leaves
  • 1/4 cup cilantro, chopped
  • 5 sprigs fresh cilantro, for garnish

How To Make crock pot chicken a la criolla

  • Step 1
    Place chicken, onion, garlic, pepper, and tomatoes in the crock pot. Season with oregano, cumin and salt. Mix well, so everything is well seasoned.
  • Step 2
    Add the tomato sauce and olives, about 1 tablespoon of the olive brine, water, bay leaf, and chopped cilantro. Mix well, and set crock pot to High for 4 hours or on Low for 6 hours.
  • Step 3
    When done, taste and adjust seasonings as needed.
  • Step 4
    Garnish each serving with fresh cilantro.
