This wonderful Spanish chicken dish that's very easy to make, and it tastes wonderful. It's great with plain white rice (though I have served it with Spanish Rice, too).

Ingredients
- 2 pounds boneless skinless chicken (thighs or breasts), about 10 pieces
- 1 small onion, diced
- 1 clove garlic, crushed
- 1 - bell pepper, chopped (green, red, yellow or orange)
- 4 large plum tomatoes
- 2 tablespoons alcaparrado or pitted spanish olives
- 1/2 cup water
- 8 ounces tomato sauce
- 1/4 teaspoon dried oregano leaves
- 1/4 teaspoon ground cumin
- 1/2 teaspoon salt
- 1-2 - bay leaves
- 1/4 cup cilantro, chopped
- 5 sprigs fresh cilantro, for garnish
How To Make crock pot chicken a la criolla

Step 1Place chicken, onion, garlic, pepper, and tomatoes in the crock pot. Season with oregano, cumin and salt. Mix well, so everything is well seasoned.

Step 2Add the tomato sauce and olives, about 1 tablespoon of the olive brine, water, bay leaf, and chopped cilantro. Mix well, and set crock pot to High for 4 hours or on Low for 6 hours.

Step 3When done, taste and adjust seasonings as needed.

Step 4Garnish each serving with fresh cilantro.
