This recipe was given to me by my sister-in-law, she had not tried it but was going to soon. I prepared this dish last night. This dish was easy to prepare, flavorful and delicious. My husband said this recipe was a keeper.

Ingredients

  • 6 - skinless chicken breasts
  • 1 pound lean smoked sausage, cut into 1-inch pieces
  • 2 - green bell peppers, coarsely chopped
  • 1 cup sliced celery
  • 1 - (14.5 ounce) can diced tomatoes, undrained
  • 2 teaspoons chicken flavored bouillion granules
  • 4 - bay leaves
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 2 cups instant rice

How To Make crock-pot cajun dinner

  • Step 1
    Rinse the chicken and pat dry.
  • Step 2
    Spray a 4-quart Crock with non-stick cooking spray.
  • Step 3
    Place sausage, peppers, onions, celery, tomatoes, bouillion, bay leaves and garlic powder.
  • Step 4
    Stir to blend well.
  • Step 5
    Top with the chicken breasts and sprinkle with black pepper.
  • Step 6
    Cover and cook for 8 hours or until the chicken is done and the vegetables are tender.
  • Step 7
    Add in the rice.
  • Step 8
    Stir gently and thoroughly to blend.
  • Step 9
    Cover and cook for 15 minutes or until the rice is tender.
  • Step 10
    Remove the bay leaves before serving.
