Ingredients
- 3 pounds chicken pieces, skinless
- - salt & pepper, to taste
- 2 tablespoons olive oil, extra virgin
- 1/4 cup dry white wine
- 2 teaspoons parsley flakes, dried
- 2 tablespoons dry vermouth
- 2 teaspoons basil, dried
- 1 teaspoon oregano, dried
- 1 pinch red pepper flakes
- 40 cloves garlic, peeled (yes! you read correctly)
- 4 stalks - celery, sliced
- - juice & peel of 1 lemon

Step 1Sprinkle chicken with salt & pepper.

Step 2Heat oil in large skillet over medium heat. Add chicken; brown on all sides. Remove to platter.

Step 3Combine wine, parsley, vermouth, basil, oregano & red pepper flakes in a large bowl. Add garlic & celery; coat well.

Step 4Transfer garlic & celery to crock pot. Add chicken to remaining herb mixture; coat well. Place chicken on top of celery mixture. Stir.

Step 5Sprinkle lemon juice & peel over chicken. Cover; cook on LOW 6 hours.
