  • ·
    4 tbsp. melted butter
  • ·
    3 tbsp. lemon juice
  • ·
    4 tbsp. dry sherry
  • ·
    2 cloves garlic, minced
  • ·
    1 t. chopped parsley
  • ·
    1 chicken, halved (2 1/2 to 3 lbs.)
  • ·
    2 t. natural meat tenderizer, unseasoned
  • ·
    pepper to taste

How to Make Crispy Lemon Chicken


  1. In small bowl, mix first 5 ingredients. Mix well. Set aside
  2. Moisten chicken with water; sprinkle evenly with tenderizer. Use no salt. Pierce chicken deeply with fork; Repeat on all sides. Season with pepper.
  3. . Place chicken skin side down on broiler pan. Broil 5 to 6 inches from heat, basting frequently about 20 minutes per side or until done.
