Ingredients
- - bonless, skinless chicken breasts, cut up
- 2 tablespoons rice wine or extra dry sherry
- 1 tablespoon soy sauce
- 1/4 teaspoon salt beaten with 1 egg white
- 3 tablespoons cornstarch
- - sprinkling of dried chili flakes
- 2-3 cloves garlic, minced
- 2 - inch piece of ginger, peeled and sliced
- 2 tablespoons soy sauce
- 1-2 teaspoon sugar
- 2 tablespoons toasted sesame seeds
- 2-3 - scallions
How To Make crispy garlic ginger chicken

Step 1Marinate the chicken with rice wine (or sherry),soy sauce and salt for 30 minutes. Beat egg white and cornstarch together till blended and add to the chicken and marinade. Stir to blend and coat chicken pieces completely.

Step 2In a wok or deep skillet, heat enough oil to deep fry chicken for 4-5 minutes or till golden brown. Remove chicken from pan; set aside. Remove all but 1 TBsp oil from pan. Over medium heat stir fry garlic, ginger, and chili flakes, till fragrant. Quickly add chicken, stir gently to coat; add soy sauce, sugar, and salt to taste. Stir to combine. Remove from pan and dust with sesame seeds. Serve with Rice!
