Ingredients For crispy cracker butter chicken

  • 2 lg
    eggs, beaten
  • 2 c
    crushed butter crackers
  • 1 tsp
  • 1/2 tsp
    black pepper
  • 1 tsp
    onion powder
  • 1/2 tsp
    garlic powder
  • 4 lg
    boneless skinless chicken breasts
  • 1/2 c
    cold butter, cubed

How To Make crispy cracker butter chicken

  • Grease a 9x13 baking dish.
    Preheat the oven to 375 degrees F. Spray a 9x13-inch baking pan with cooking spray.
  • Beaten eggs in one bowl and crushed seasoned butter crackers in a second bowl.
    In a shallow bowl, place the 2 beaten eggs. In another shallow bowl, combine the crushed crackers, salt, black pepper, onion powder, and garlic powder.
  • Dredge chicken in the beaten eggs.
    Dredge a chicken breast in the beaten egg.
  • Dredge chicken in crushed butter crackers.
    Then, dredge the chicken in the cracker mixture.
  • Coated chicken in the greased baking dish.
    Place in the prepared baking pan. Repeat with the other three chicken breasts.
  • Cubes of cold butter over the chicken breasts.
    Place the cubed butter evenly over the chicken breasts.
  • Bake the chicken until the internal temperature is 165 degrees F.
    Bake in a preheated oven for 40 minutes or until the thickest part of the chicken breast reads 165 degrees with a meat thermometer.
  • Browned Crispy Cracker Butter Chicken.
    To brown the top of the chicken, turn the oven broiler on for the last 5 minutes keeping an eye on the chicken to ensure it does not burn.
