crispy baked chicken thighs
This is my “go-to” chicken recipe. The blend of herbs and spices in the rub mix gives these thighs a wonderfully crispy skin and moist dark meat underneath. This dish is perfect even for busy nights when you don't have a lot of prep time, because it doesn't require marinating time. You can marinate for a richer flavor depth, but it's still quite delicious if you don't. I usually serve it with white rice or potatoes and some steamed green beans. You can use skin-on chicken breasts, but you run the risk of the chicken drying out.

Ingredients
- 4 large chicken thighs, bone-in skin-on
- 2 tablespoons olive oil (can sub with garlic butter)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon dried thyme leaves
- 1 teaspoon dried rosemary, roughly chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
How To Make crispy baked chicken thighs

Step 1Prepare oven to 425°F. Line a standard-size baking sheet (cookie sheet) with parchment paper.

Step 2Rinse chicken thighs briefly (to remove oils and residue, then pat thighs dry with paper towels to remove as much moisture as possible (which is crucial for making sure the skin crisps sufficiently).

Step 3In a small mixing bowl, blend together the olive oil, garlic powder, onion powder, paprika, thyme, salt, and pepper. Rub the mixture over all sides of the chicken thighs, getting into each nook and fold. Place the coated thighs on the baking sheet, skin side up.

Step 4Bake the thighs for 45 to 50 minutes or until internal temperature reaches 165°F. For extra crispness of the skin, you can broil the thighs during the last 3 to 5 minutes.

Step 5When the thighs are done, set the baking sheet aside to let the thighs rest for 5 minutes to allow juices to settle and to keep the inside meat moist. Then serve immediately.
