crispy and delish baked chicken
My family loves this easy recipe. I love it because it isn’t fried but is just as delicious and it is a flexible recipe. You can vary the crackers, spices, and cheese to your liking.

Ingredients
- 3 - chicken breast halves, skinless and boneless
- 1/4 cup mayonnaise
- 1 - egg
- 2 tablespoons water
- 1 cup panko bread crumbs
- 15 - crackers crushed
- 1 teaspoon italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3/4 cup parmesan cheese
- 4 tablespoons butter melted
How To Make crispy and delish baked chicken

Step 1Preheat oven to 450 degrees

Step 2Split each chicken breast. Place chicken breast on cutting board and hold hand down on breast. Slice horizontally to make two pieces.

Step 3Cut each piece into two. You should now have 12 pieces.

Step 4In a bowl mix 1/4 cup mayonnaise, egg, and 2 T water. Mix well with a fork until the mixture looks slightly frothy.

Step 5In a separate bowl, mix Panko crumbs with cracker crumbs. I used 15 Ritz crackers which I think was around 1/2 to 1 cup of crumbs. You can use any crackers. Bacon flavored Ritz crackers are tasty and so are Cheezits. Use whatever tickles your fancy.

Step 6Add salt, pepper, and Italian seasoning to crumb bowl. I like to try different combos. You can use any of your favorites.....garlic salt, onion powder, ranch, etc.

Step 7Grate some fresh Parmesan cheese into the crumb and spices. Again, use your favs. I used Parmesan, Asiago, and reggiano cheese. Carefully mix this all together.

Step 8Melt 4 Tablespoons butter and pour ONE tablespoon (reserve the rest!) on a rimmed cookie sheet. Spread it all over the sheet so it coats it well. Don’t be afraid to get your hands dirty!

Step 9Set up your bowls and chicken. You will first dip the chicken into the egg mayo mixture. Completely cover the chicken and then let excess drip back into the bowl.

Step 10Place the egg washed chicken into the crumb/cheese mixture. Cover and slightly press the coating onto the chicken.

Step 11Continue this procedure with each piece. I ran out of room on my pan with 11 pieces so I saved the extra piece for future use.

Step 12Take remaining butter and drizzle a bit on each piece then place in the oven for 9 minutes.

Step 13Carefully remove and flip each piece of chicken over and cook for another 9 minutes until they are golden brown. You might need a minute or two more or less on each side depending on your oven.

Step 14Remove from oven and enjoy with your favorite dipping sauce. My 9 year old loves a side of BBQ sauce and mayo mixed together.
