Ingredients

1 lbchicken cutlets

2 tspolive oil
-
1 cwhite wine or chicken broth

1/4 cwhipping cream {35%}

2 Tbspchopped fresh tarragon.

·sweet potatoes and beans

2sweet potatoes, peeled and cut in 1/2 inch cubes

1/2 lbgreen beans cut diagonally in 1 inch pieces

1 Tbspgrainy mustard
How to Make Creamy Tarragon Chicken
- Using mallet flatten chicken if thicker than 1 inch, sprinkle with salt and pepper. Heat oil in skillet saute chicken each about 6 minutes both sides, add wineand cook another 5 minutes...remove to plate...Boil pan juices until reduced to about 1/2 cup, whisk in tarragon,wine,mustard and cream. cook until thickened enough to coat back of spoon..serve over chicken.
- In skillet, heat oil over medium-high heat add [potatoes and cook til crisp about 10 minutes,stirring occasionally...add beans to skillet, add 1/4 cup water, cover, and cook until both beans and taters are fork tender, toss with honey and mustard mixture...and serve with chicken.
