Tangy mustard and sweet honey gives this dish great flavor,,and boneless turkey breast is a good substitute for the chicken.

Ingredients

  • 1 pound chicken cutlets
  • 2 teaspoons olive oil
  • 1 cup white wine or chicken broth
  • 1/4 cup whipping cream {35%}
  • 2 tablespoons chopped fresh tarragon.
  • - sweet potatoes and beans
  • 2 - sweet potatoes, peeled and cut in 1/2 inch cubes
  • 1/2 pound green beans cut diagonally in 1 inch pieces
  • 2 tablespoons honey
  • 1 tablespoon grainy mustard

How To Make creamy tarragon chicken

  • Step 1
    Using mallet flatten chicken if thicker than 1 inch, sprinkle with salt and pepper. Heat oil in skillet saute chicken each about 6 minutes both sides, add wineand cook another 5 minutes...remove to plate...Boil pan juices until reduced to about 1/2 cup, whisk in tarragon,wine,mustard and cream. cook until thickened enough to coat back of spoon..serve over chicken.
  • Step 2
    In skillet, heat oil over medium-high heat add [potatoes and cook til crisp about 10 minutes,stirring occasionally...add beans to skillet, add 1/4 cup water, cover, and cook until both beans and taters are fork tender, toss with honey and mustard mixture...and serve with chicken.
