Ingredients
- SEAR CHICKEN 5 MINUTES PER SIDE
- 2 pounds boneless, skinless, chicken breasts (3-4)
- 1 tablespoon butter
- SAUTE 3 MINUTES
- 2 cloves garlic, minced
- 1/4 cup onion, diced
- SAUTE ANOTHER 2 MINUTES
- 12 ounces jar roasted red peppers, finely chopped
- ADD. SIMMER TO MELT.
- 1-1//4 cup chicken broth
- 4 ounces cream cheese, low fat
- 1/4 teaspoon crushed red pepper
- ADD CHICKEN & BASIL, SALT, PEPPER. SIMMER 2 MINUTES.
- 1/4 cup basil leaves, chopped
- dash salt & pepper, to taste
How To Make creamy roasted red pepper chicken skillet

Step 1In large skillet, melt butter over medium heat. Add chicken breasts and sear for 5 minutes per side. Remove chicken from skillet and set aside.

Step 2In same skillet, saute the onions and garlic for 3 minutes. Add red peppers and saute another 2 minutes.

Step 3Add the broth, cream cheese, and crushed red pepper. Simmer and stir until cheese is melted in the broth.

Step 4Add chicken back to the skillet to warm. Add basil, salt and pepper. Simmer 2 minutes.
