Ingredients

  • SEAR CHICKEN 5 MINUTES PER SIDE
  • 2 pounds boneless, skinless, chicken breasts (3-4)
  • 1 tablespoon butter
  • SAUTE 3 MINUTES
  • 2 cloves garlic, minced
  • 1/4 cup onion, diced
  • SAUTE ANOTHER 2 MINUTES
  • 12 ounces jar roasted red peppers, finely chopped
  • ADD. SIMMER TO MELT.
  • 1-1//4 cup chicken broth
  • 4 ounces cream cheese, low fat
  • 1/4 teaspoon crushed red pepper
  • ADD CHICKEN & BASIL, SALT, PEPPER. SIMMER 2 MINUTES.
  • 1/4 cup basil leaves, chopped
  • dash salt & pepper, to taste

How To Make creamy roasted red pepper chicken skillet

  • Step 1
    In large skillet, melt butter over medium heat. Add chicken breasts and sear for 5 minutes per side. Remove chicken from skillet and set aside.
  • Step 2
    In same skillet, saute the onions and garlic for 3 minutes. Add red peppers and saute another 2 minutes.
  • Step 3
    Add the broth, cream cheese, and crushed red pepper. Simmer and stir until cheese is melted in the broth.
  • Step 4
    Add chicken back to the skillet to warm. Add basil, salt and pepper. Simmer 2 minutes.
  • Step 5
    Serve.
