Consider cutting the chicken in slices after cooking and serve over rice. Pour pan sauce over the top.

Ingredients

  • SEAR CHICKEN 5 MINUTES PER SIDE

  • 2 lb
    boneless, skinless, chicken breasts (3-4)
  • 1 Tbsp
    butter
  • SAUTE 3 MINUTES

  • 2 clove
    garlic, minced
  • 1/4 c
    onion, diced
  • SAUTE ANOTHER 2 MINUTES

  • 12 oz
    jar roasted red peppers, finely chopped
  • ADD. SIMMER TO MELT.

  • 1-1//4 c
    chicken broth
  • 4 oz
    cream cheese, low fat
  • 1/4 tsp
    crushed red pepper
  • ADD CHICKEN & BASIL, SALT, PEPPER. SIMMER 2 MINUTES.

  • 1/4 c
    basil leaves, chopped
  • dash(es)
    salt & pepper, to taste

How to Make Creamy Roasted Red Pepper Chicken Skillet

Step-by-Step

  1. In large skillet, melt butter over medium heat. Add chicken breasts and sear for 5 minutes per side. Remove chicken from skillet and set aside.
  2. In same skillet, saute the onions and garlic for 3 minutes. Add red peppers and saute another 2 minutes.
  3. Add the broth, cream cheese, and crushed red pepper. Simmer and stir until cheese is melted in the broth.
  4. Add chicken back to the skillet to warm. Add basil, salt and pepper. Simmer 2 minutes.
  5. Serve.
