creamy fiesta chicken

I literally seasoned the chicken with salt, pepper and cumin.. Browned it in olive oil.. removed and set it aside. Poured soup and salsa and frozen corn in the same pan.. heated it up a bit, returned the chicken to the mix let it heat through and served it over rice.. sooo flippin easy!

Ingredients

  • 5 pounds boneless, skinless chicken breasts or thighs, cut up
  • - olive oil
  • - salt, pepper and cumin, to taste
  • 2 cans cream of chicken soup
  • 2- 7 oz, cans herdez salsa
  • 1 cup frozen corn
  • - cooked white rice

How To Make creamy fiesta chicken

  • Step 1
    Cup up chicken and season with salt, pepper and cumin. Brown in olive oil. Remove chicken from pan when no longer pink.
  • Step 2
    Stir in soups, salsas and corn, mix. Return chicken to mixture. Heat through. Serve over rice.
