creamy chicken with roasted mushrooms & tomatoes
This is a really easy baked chicken dish that goes great with pasta, rice or potatoes. The roasted mushrooms and tomatoes are optional and could be easily replaced with seasonal vegetables. Also, the can of soup does not have to be the mushroom variety. I have had great success using cream of chicken as well as cream of broccoli.

Ingredients
- CHICKEN
- 4 - boneless, skinless chicken breasts
- 1 - 1 1/2 cups flour
- 1/2 teaspoon seasoning salt
- 1/4 teaspoon pepper
- SAUCE
- 1 small can cream of mushroom soup
- 1/2 cup milk, at room temperature
- 1 teaspoon dried onion flakes
- 1/4 teaspoon dried rosemary
- 1/4 teaspoon garlic powder
- 1/2 teaspoon parsley flakes
- 1/4 teaspoon pepper
- pinch - salt
- MUSHROOM AND TOMATO
- 12-15 - button mushrooms, washed
- 1 can sliced tomatoes, drained
- - dried basil leaves
- - olive oil non-stick spray (or other non-stick spray)
- pinch - salt and pepper
How To Make creamy chicken with roasted mushrooms & tomatoes

Step 1Preheat oven to 400 degrees. Sift together in a small bowl flour, seasoning salt and 1/4 tsp pepper. Coat the chicken in flour mixture and place in a lightly greased baking dish. (I used a 9x9x2 baking dish) Bake for 10 minutes.

Step 2Meanwhile, in a mixing bowl, whisk together a small can of cream of mushroom soup, room temperature milk, onion flakes, rosemary, garlic, salt, pepper and parsley flakes. After chicken has cooked for about 10 minutes, pour the soup mixture over the chicken, making sure that it completely coats the top of each chicken. It won't completely cover them, but will "puddle" in pan. Bake 25-35 minute, until chicken reaches internal temp of 180 degrees.

Step 3Lightly grease a baking sheet with flavored nonstick spray. Place the mushrooms on their tops and lay out the tomatoes. Lightly spray the mushrooms with nonstick spray. Sprinkle salt, pepper and basil leaves over the tomatoes. Bake 5 minutes, then carefully turn mushrooms onto their sides, and bake another 5 or so minutes. Mushrooms will be soft but not mushy.

Step 4When plating, the soup mixture that is in the bottom of the pan can be spooned over the chicken.
