Cranberry Rice ~ Savoring Cape Cod
Taken from the cookbook "Savoring Cape Cod"
1-2 Tbspcanola oil
2 clovegarlic, minced
1 cchopped onion
2 clong grain white rice
3 cchicken broth
1/2 cdried cranberries
1/2 cchopped scallions
·salt and pepper to taste
How to Make Cranberry Rice ~ Savoring Cape Cod
- Saute' the garlic and onions in a 2 quart saucepan until the onions are translucent.
Add the rice and chicken broth, cover and bring to a boil. Reduce heat to simmer and cook for 20 minutes.
Remove from the heat, but do not remove the cover for an additional 20 minutes.
- Toss the rice with the cranberries and scallions. Add salt and pepper to taste.
