cranberry rice ~ savoring cape cod
This makes a great side dish with any seafood recipe. Easy enough to make as well. Taken from the cookbook "Savoring Cape Cod"

Ingredients
- 1-2 tablespoon canola oil
- 2 cloves garlic, minced
- 1 cup chopped onion
- 2 cups long grain white rice
- 3 cups chicken broth
- 1/2 cup dried cranberries
- 1/2 cup chopped scallions
- - salt and pepper to taste
How To Make cranberry rice ~ savoring cape cod

Step 1Saute' the garlic and onions in a 2 quart saucepan until the onions are translucent. Add the rice and chicken broth, cover and bring to a boil. Reduce heat to simmer and cook for 20 minutes. Remove from the heat, but do not remove the cover for an additional 20 minutes.

Step 2Toss the rice with the cranberries and scallions. Add salt and pepper to taste. Serve 6-8 submitted by Joanne Hush
