Cranberry Rice ~ Savoring Cape Cod
Taken from the cookbook "Savoring Cape Cod"
- 1-2 Tbsp
- canola oil
- 2 clove
- garlic, minced
- 1 c
- chopped onion
- 2 c
- long grain white rice
- 3 c
- chicken broth
- 1/2 c
- dried cranberries
- 1/2 c
- chopped scallions
- salt and pepper to taste
How to Make Cranberry Rice ~ Savoring Cape Cod
- 1Saute' the garlic and onions in a 2 quart saucepan until the onions are translucent.
Add the rice and chicken broth, cover and bring to a boil. Reduce heat to simmer and cook for 20 minutes.
Remove from the heat, but do not remove the cover for an additional 20 minutes.
- 2Toss the rice with the cranberries and scallions. Add salt and pepper to taste.
