This makes a great side dish with any seafood recipe. Easy enough to make as well.

Ingredients

1-2 Tbsp
canola oil
2 clove
garlic, minced
1 c
chopped onion
2 c
long grain white rice
3 c
chicken broth
1/2 c
dried cranberries
1/2 c
chopped scallions
salt and pepper to taste

How to Make Cranberry Rice ~ Savoring Cape Cod

Step-by-Step

  • 1Saute' the garlic and onions in a 2 quart saucepan until the onions are translucent.
    Add the rice and chicken broth, cover and bring to a boil. Reduce heat to simmer and cook for 20 minutes.
    Remove from the heat, but do not remove the cover for an additional 20 minutes.
  • 2Toss the rice with the cranberries and scallions. Add salt and pepper to taste.
