Cranberry Country Chicken
Got this recipe from Yolanda's Cranberry Country Recipes
1 1/2 lbchicken breasts, boneless and skinless cut in half and flattened
1/4 cbread crumbs
1 cfresh or frozen cranberries
1/3 conion, chopped
1/2 corange juice
1/8 tspground cinnamon
1/8 tspground ginger
How to Make Cranberry Country Chicken
- Preheat oven to 400F
Stir sauce ingredients in a saucepan over high heat.
Bring to a full boil. (Cranberries will soften and split.)
Coat chicken pieces with bread crumbs.
- Butter one oven-proof glass dish large enough to contain the four chicken breasts. Place coated chicken pieces in dish. Pour sauce over chicken. Cover with aluminum foil.
Bake at 400 degrees for 30 minutes.
Serve over rice.
