cranberry country chicken

This is another way to serve chicken ~ which I make most often and always looking for new ways to bake it. Great time of year for cranberries and this is a quick and different way to serve it. You can use frozen or fresh cranberries in the sauce, so buy em fresh now and freeze some of them for later. Got this recipe from Yolanda's Cranberry Country Recipes

Ingredients

  • 1 1/2 pounds chicken breasts, boneless and skinless cut in half and flattened
  • 1/4 cup bread crumbs
  • SAUCE:
  • 1 cup fresh or frozen cranberries
  • 1/2 cup sugar
  • 1/3 cup onion, chopped
  • 1/2 cup orange juice
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger

How To Make cranberry country chicken

  • Step 1
    Preheat oven to 400F Stir sauce ingredients in a saucepan over high heat. Bring to a full boil. (Cranberries will soften and split.) Coat chicken pieces with bread crumbs.
  • Step 2
    Butter one oven-proof glass dish large enough to contain the four chicken breasts. Place coated chicken pieces in dish. Pour sauce over chicken. Cover with aluminum foil. Bake at 400 degrees for 30 minutes. Serve over rice.
