I love this chicken because it is an easy quick dish. It is also low fat.

Ingredients

  • 4 - boneless chicken breasts or
  • 6 - chicken thighs, skinless and boneless
  • 1 - sleeve of low fat wheat crackers
  • 1 - stick of light butter
  • 1/2 tsp - garlic pepper seasoning
  • 1/4 tsp - mrs. dash fiesta lime seasoning
  • 1/2 cup - cup of fresh parmesan cheese, grated

How To Make crackered chicken

  • Step 1
    Preheat oven to 350'. Melt butter, put aside. Crush crackers, add seasonings and add cheese. Roll clean patted dry chicken in butter, then in cracker mixture. Put in 13 x 9 pan. Pour remaining butter over all. Bake 40-50 minutes until juices run clear.
