    can stewed tomatoes, undrained
  • 1/4 c
    dried raisens
  • 3 tsp
    curry powder
  • 1 tsp
    instant chicken boulion granules
  • 1/2 tsp
    ground nutmeg
  • 1/4 tsp
  • 6
    pieces of chicken raw boneless
  • 1 Tbsp
  • 1 Tbsp
    cold water

    6 cups hot cooked rice

How to Make Country Captain


  1. Cut up any large pieces of tomatoe. In a very large skillet, stir together undrainedtomatoes, raisons, curry powder, boulion granules, nutmeg,and sugar. Sprinkle chicken lightly with salt and pepper, Place chicken in skillet. Spoon sauce over chicken. bring mixture to boiling. reduce heat. Cover and simmer for 35 to 45 minutes or until chicken is tender and no longer pink, Remove chicken from skillet keep warm.
  2. For sauce, skim any fat from mixture in skillet. in a small bowl, stir together cornstarch an cold water;add to skillet Cook an stir until thickened. cook an stir for 2 min more. serve sauce over hot chicken an rice sprinkle a little parsley over for decoration ummmmm
