Ingredients
- 2 teaspoons canola oil
- 1 large onion, chopped
- 4 cups frozen hash brown potatoes
- 1 cup corned beef brisket (see tip below)
- 1/2 cup chicken broth, low salt
- 1/4 cup parsley, fresh, chopped
- - salt & pepper, to taste
- 4 large eggs
How To Make corned beef hash

Step 1In a large cast-iron skillet (or electric skillet), heat oil over medium-high heat. Add onion & saute until it starts to brown, 5 - 8 minutes.

Step 2Add potatoes & cook, stirring, until they brown in spots & become crusty, about 8 minutes more.

Step 3Stir in corned beef & broth & cook, scraping up any browned bits, until liquid is absorbed, 5 - 8 minutes. Add parsley & season with salt & pepper.

Step 4Meanwhile, fill a large skillet with 2" salted water & bring to a gentle simmer. Break eggs, one at a time, onto a saucer & slide into the simmering water. Poach eggs until set to desired firmness, 4 - 5 minutes.

Step 5Divide hash among 4 plates. Place eggs on top of hash.

Step 6TIP: Corned beef can be purchased at your supermarket deli. Be sure to specify lean: it has 1 gm fat per ounce & an ounce of regular corned beef has 5 grams fat.
