cornbread chicken
This, as with many of my recipes, came from one of those moments where you are looking around your pantry saying "What the hell can I make with these things..." I think it came out really well and it stayed on the menu. I have tried oven baked and skillet fried versions and prefer the oven baked, as it is less greasy.

Ingredients
- 1 box your favorite cornbread mix
- 4 - bonesless, skinless chicken breasts or 8 bonesless, skinless thighs
- 1/4 cup water
- 2 tablespoons extra virgin olive oil
How To Make cornbread chicken

Step 1Mix about half the box of cornbread mix, water and olive oil with any seasonings you like. I use a little garlic powder and some pepper. Batter should be thick, almost like brownie batter.

Step 2Dip chicken pieces into batter and place on sprayed pan or baking dish.

Step 3Bake 45 minutes to an hour, until cooked through. Check for internal temp of 165 degrees.

Step 4Allow to sit for about five minutes after removing from oven. Enjoy!
