Ingredients
- salt
- 2 tablespoons coriander seeds
- 4 large bone-in chicken thighs
- 1 head cauliflower, cut into bite size florets
- extra virgin olive oil
- 3 ribs celery, sliced
- 4 cloves garlic, minced
- 1 large onion, chopped
- 1 cup dry white wine
- 1/4 cup sherry vinegar
- 2 cups chicken stock
- 1/4 cup chives
How To Make coriander chicken with cauliflower

Step 1Grind the coriander seeds in a coffee grinder. Season the chicken with the coriander and salt.

Step 2Toss the cauliflower in a pan of salted boiling water and cook 5 minutes. Drain and set aside.

Step 3Add olive oil to a large oven safe pan. Place the chicken skin side down in the hot oil and cook until browned then turn over and cook until browned on the other side. Remove and set aside.

Step 4Add onions and garlic to the pan. Cook until the onions are translucent.

Step 5Add the wine and vinegar and cook until most of it evaporates. Add the chicken stock, cauliflower, and chicken back to the pan.

Step 6Preheat oven to 350 degrees F. Place a cover on the pan and place it in the oven. Bake for about 30 minutes.

Step 7Remove the cover and continue to bake for another 10 minutes.

Step 8Plate and garnish with chives.
